Baked Pancakes with Lemon Ginger Earl Grey Green Tea

A tasty pancakes infused with the flavour of earl grey tea. Perfect dish for breakfast or brunch!

Optional choices: 1/3 fresh cranberries, 1 peach, 1/2 cup golden berries, 1/3 raspberries, 1/3 almond flakes
Maple syrup or honey for serving

Preheat the oven to 390F
Lightly grease a (10x14 inch) baking tray (cooking spray works great) and place in the oven to get hot.
Transfer Lemon Ginger Earl Grey Green Tea blend to a food processor or electric coffee grinder and pulse few times.
In a medium bowl mix milk and lemon juice.
In a big bowl whisk together all the dry ingredients, including the tea.
Slowly add the milk mixture and the rest of wet ingredients into the dry ingredients and whisk together.
Set the mix aside and prepare your toppings. All toppings are not necessary, choose any toppings you desire.
Remove the hot tray from the oven and pour in the batter.
Place desired fruit slices on top and/or sprinkle with flaked almonds.
Bake for about 8-12 minutes or until lightly golden.
Remove from the oven, cool down for at least 2 minutes and cut.
Top with honey or maple syrup and serve. Enjoy!
