Baked Lemon Earl Grey Donuts

Makes 6 Donuts

Ingredients:

  • 1 cup flour

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • dash of salt

  • 2 tsp Lemon Ginger Earl Grey tea 

  • 1 egg

  • 1/4 cup vanilla yogurt

  • 1/4 cup milk of your choice 

  • 1 tsp vanilla extract

  • 2 tbsp oil

  • 1/3 cup brown sugar

  • juice from 1/4 lemon 

  • 2 tsp orange marmalade 

For the glaze:

  • 1 3/4 cup icing sugar

  • 2 Tbsp lemon juice, strained

  • 1 tsp Lemon Ginger Earl Grey tea  

  • 1/4 milk of your choice 

Optional: cinnamon, lemon peel, lemon slices

Instructions:

  1. Warm your milk gently in the microwave, add tea and let it steep and infuse for about 30 minutes, then strain. 

  2. Lightly grease a donut baking pan (cooking spray works great), preheat the oven to 370 degrees Fahrenheit.

  3. Combine dry ingredients: flour, baking powder, baking soda, salt and set aside.

  4. In a separate bowl combine wet ingredients: egg, yogurt, lemon juice, marmalade, steeped milk, vanilla extract, oil, and sugar. Mix well. 

  5. Using spatula gently mix wet and dry ingredients just until combined (don’t over mix). 

  6. Using a small spoon carefully add batter to donut pan. Fill each donut cavity about 3/4 full.

  7. Bake your donuts for about 10-12 minutes. Let them cool in the pan for about 5 minutes than gently transfer to a cooling rack.

  8. In a medium saucepan, bring the milk to a boil, then turn off the heat, add in the tea leaves and let the tea infuse for 10 minutes. Once the 10 minutes are up, strain the tea into a bowl. Add the rest of ingredients for the glaze and whisk together. 

  9. Dip donuts into the glaze and put them on a cooling rack to dry. 

  10. Feel free to decorate your donuts with lemon peel/slices or dust with a cinnamon.

Our take on a classic, this Lemon Ginger Earl Grey tea is made with green tea instead of black tea, and features chicory root, ginger, and lemon verbena. We opted for green tea in this blend because while we love the smokiness of black tea, we wanted to keep this tea feeling lighter, while still ensuring caffeine content, and when infused with the ginger, lemon verbena, and chicory, the green tea flavor in this blend is incredibly subtle!
