Ginger Spiced Apple Cake

Ingredients:

  • 2 1/4 cup all purpose flour

  • 1 1/4 cup brown sugar

  • 4 eggs

  • Zest of one orange

  • 3 tsp Ginger Spiced tea (blended into powder using coffee grinder)

  • 1 cup oil

  • 1 Tbsp honey

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/3 cup dried cranberries (optional)

  • 1/3 cup rolled oats 

  • 4 apples

Instructions:

  1. Preheat the oven to 350F and line your baking pan with parchment paper. 

  2. Peel, core and dice the apples.

  3. To a medium bowl add eggs, brown sugar and orange zest and beat for about 5-8 minutes. 

  4. Slowly add oil and honey and beat again. 

  5. To a separate bowl add flour, baking powder, baking soda and Ginger Spiced tea blend.

  6. Using a spatula gently mix and combine wet and dry ingredients.

  7. Add oats, dried cranberries and half of diced apples and stir until combined.

  8. Transfer to a baking pan and bake for about 1 hour and 15 minutes or until inserted toothpick comes out clean. 

    Prepare the other half of diced apples

  9. Place them in a skillet with 2 Tbsp water, add 2 tsp honey, couple of orange slices, one star anise and one cinnamon stick and cook covered over medium heat, stirring occasionally until the apples become soft.

  10. Remove apples from heat and spoon on top of your ginger spiced apple cake. Slice the cake and enjoy!
