Triple Berry Jam

Serving size: 1 medium sized jar | Prep time: 20 minutes | Cook time: 15 minutes


Ingredients:

  • 4 tsp Elderberry Relief tea

  • 1/2 cup hot water

  • 1 cups raspberries (fresh or frozen)

  • 1 cup cranberries (fresh or frozen)

  • 2 Tbsp chia seeds

  • 1 tablespoon agar agar powder

  • 3-5 Tbsp Honey/maple syrup/brown sugar


Directions:

1. Steep tea in freshly boiled water for 10 minutes (covered), then strain.

2. In a saucepan on medium-heat, combine the raspberries, cranberries and steeped tea.

3. Bring mixture to a boil for about 15 minutes. Stir continuously and mash berries as they cook, add chia seeds and agar agar powder.


4. Reduce heat to a simmer and add sweetener of your choice. Mix well.


5. Remove from heat, fill clean, glass jar. Let cool before sealing.


6. Store the jam in the refrigerator. Use within 1-2 weeks.
 Enjoy this tea infused jam on freshly baked scones, toasts, muffins, cookies, etc.
